Born in Mexico City and trained in Buenos Aires, Sainz sharpened his craft inside some of the world’s most respected Michelin-recognized kitchens — including Pujol in Mexico City, Mugaritz in Spain, Boragó in Chile, and Epicure in France. Across continents, he absorbed discipline, precision, and a deep respect for terroir-driven cuisine.
Yet it was leaving Mexico that made him fully understand it.
Today, his cooking blends globally honed technique with the ritual, biodiversity, and cultural depth of his homeland. At Artist Row, his signature dish reflects that evolution — rooted in heritage, executed with international clarity, and elevated by the standards of the world’s finest kitchens.
